Semolina flour is finely milled from durum wheat, which is high in protein (it’s also the
flour used to make pasta!). When used in bread, the creamy coloured flour makes for a
soft body with an almost winey aroma, and a crisp rustic crust. Many of our customers
that are gluten intolerant can cope well with this bread and now they are often back to
enjoy a real flavoured bread.
